We didn't cook today, sadly. Yesterday was the last day :(. We had our last demo of all this morning with Rory though, which was great :). Regrettably, I didn't take a ton of decent pictures today. My camera was still set on the funky setting from yesterday evening, but that's okay! The effects on some of the pictures was actually pretty neat! Check out this picture of Nan!!! :D
We learned how to make all sorts of bizarre foods today in the demo, including beef carpaccio, WHOLE poached salmon topped with shrimps (first picture), ouefs a la neige (foamy meringues on top of creme anglais - second picture), and baked Alaska. We got to eat it all for lunch, too, which was absolutely delicious! We have been so spoiled here with the lunches our professors create for us! I'm going to miss all of the splendor of mid-week lunches :(. I have realized this last week that perhaps my most favorite dish I have ever tasted is a lamb tagine they make here. It is similar to a stew, but has a lovely, sweet and citrusy flavor with a base of saffron - it's to die for!

After we finished lunch, people began to prepare for the upcoming exams. Luckily I cook my final meal on Thursday, so the stress didn't kick in too much today. I was able to study, and took a break to run to the beach. It was so beautiful!! The wind was blowing so hard, which made the experience so intense!! :D I'm going to miss seeing the Ballycotton lighthouse across the bay.
After my run, I went back to the kitchens for sourdough funzies once more. I folded the sourdough I will be using for my final exam, which is feeling pretty good so far - I'm keeping my fingers crossed that it will bake into a lovely loaf of spelt sourdough. Here's one of the loaves Maddy was experimenting with that evening: stenciled sourdough loaves. I have no idea how she did it, but it's absolutely beautiful! It's perfect for the holiday season :).
After sourdough, I studied and organized my files for Friday. Goodness there is so much to do before the end of this week. It's already flying by. I can't believe I'll be home all cozied up with my animals and family in less that a week!!!
