Today was a really big day. I don't think I sat down for more than an hour total today once I got moving around 9:30. My dad and my sister got to Ireland today as well!!! WOOHOO!! :D
Here's how the day went!
Nan and I woke up and headed to the kitchen to make breads (Nan had to make a hundred or so baby brioche buns for the student pop-up dinner, and I was there to experiment with Tim). Here's a shot I got of Nan's meticulous work! They turned out really well, by the way! :D

Nan and I woke up and headed to the kitchen to make breads (Nan had to make a hundred or so baby brioche buns for the student pop-up dinner, and I was there to experiment with Tim). Here's a shot I got of Nan's meticulous work! They turned out really well, by the way! :D
Tim and I were experimenting with a steamed white yeast bread that he had seen made before in a country in South America (I don't remember where though). He wanted to put together a sped-up video of the process, so he filmed my hands as I made the dough. I learned how to shape rolls (which is a lot harder than it looks!) and also made a 5-plait again! I managed to get a time-lapse of the braiding! :D It's so fun to do once you get the hang of it! The first picture is the final product after we steamed the dough in a bamboo steamer over a wok for an hour or so, then I have a before and after shot of the plait. The texture is similar to Whitehouse Rolls (a roll we have in Richmond from Ukrops I think? Something like that :D).
I was also able to go on a RUN!!! FINALLY!! It was a lovely long run on such a bright and sunny day. I didn't feel great, but somehow my splits weren't awful. It put me in such an energetic mood though! I was probably driving Tim up the wall with all my adventurous bread ideas!
Also as a quick interjection, I finally uploaded the video of me butchering a lamb!
Here are some of the pictures I took from the Mad Hatter pop-up dinner. All of the waitresses got to dress up and wear crazy eyelashes! It was so much fun!! The meal was quite extensive and had fun with puns. The two canapés in the beginning was lamb burgers on baby brioche buns (that Nan made!), and root vegetable crisps. Then the starter was a communal board of pita bread, hummus, red quinoa tabouleh, and mint raita. I think the main was roast pheasant with a red currant sauce, parsnip puree, and then jerusalem artichokes and a potato gratin. Dessert was a tea ice cream with a red checkerboard tart (spiced crust and lattice filled with raspberry sauce). Delicious!! It was such a great night!
After we had finished cleaning up the dining room (around 10:30), a group of students went over to the Ballymaloe Shed and listened to some live music before going to the Blackbird pub in Ballycotton. The whole town of all ages seemed to have turned up!! We all had such a blast! There was dancing and live music, and just an overall feeling of good spirit. It's weird to think that this is probably the last time I'll go to the famed pub.
What an exhausting night! I'm so glad my dad and sister made it safely!
