Today is the day, off to great places, off and away! Madeline and I had an early morning so we wouldn't have to rush through customs. We had a decent breakfast, but I guess Ballymaloe has dramatically increased our standards of food service. It felt so weird to say goodbye to Madeline, drink my last Irish hot chocolate (which isn't uniquely Irish, per se, just prepared here in the country hah) and step off Irish soil one last time (well, for the time being).
Goodness I knew this day would come, but I still never really wanted to think about it. Even though I came to Ballymaloe looking for answers and to have my path become clearer to me, it seems that only more questions have presented themselves to me. Typical. I guess I can only do the best I can with the knowledge this school has imparted on me. Needless to say, however, that perhaps the best decision I ever made was to come to this school. The FOOD, the FUN, the countryside, and the PEOPLE!!!!! New sights and flavors every day! I wouldn't change anything for the world. I have learned so much here without fully realizing it, and I know these skills - both palpable and intangible - will stick with me for the rest of my life! My heart is so full of love and happiness whenever I think back to the good ol' times of Ballymaloe :).
While gazing out the window and seeing a beautiful, golden ray of sun shining through the clouds, I got my last shot of this beautiful Emerald Isle.

Thank you, everyone, for taking the time to read my blog! I've done my best to recount all of my adventures here in text and pictures! It certainly has been an eye-opening and enlightening experience! If you ever consider doing the course, DO IT!!! You won't regret it! As tough as I may have made the kitchen life out to seem, living here has been a dream - like I'm living in a fairyland filled with mind-blowing food experiences!!
