Today was a great day! I had a chance to bake a lot, which was a blast :).
Because it took me so long to do the croissants and consommé, I never had time to make the lemon soufflés!! Oh well! It just means I'll have to make them again :). They'd be pretty much paleo, too, since it's lemon, sugar, butter, and egg! I guess the high amount of sugar in them isn't ideal though, but at least there's no grain or dairy. Today I learned that it's okay to not cook something. If I had decided to make the soufflés, I would have been in the kitchen for so much longer! I'm glad it worked out :).
- Croissants: I finally finished the croissants! They turned out really really well! Debbie gave them a 10!! :D. It's surprised me so much too because the dough felt so bizarre and looked totally wrong with all the chunks of butter in it. I made a baby chocolate one with some of the scraps, which was so cute!! :) I love making mini versions of things.
- Beef Consommé: this is incredibly time consuming. I had to prep a ton of vegetables and meat just so that they could be cooked down and strained into a clear broth. Apparently though they are a mark of a good chef if it's on the menu and robust enough, so the skill is nice to have. Mine turned out really well too! I am still working on quicker knife skills, so it took me a lot longer than I expected to dice all of the vegetables.

After demo, I went to work on sourdough :). I decided to experiment with a chocolate sourdough - why not!? I put in cocoa and a bit of sugar into the dry ingredients and then mixed it like I would a normal loaf. Tonight I also cooked a sourdough I experimented with by adding raisins and cinnamon. Sadly the cinnamon didn't really shine through :(. Tim thinks that sugar could have enhanced the taste, so maybe if I make another one that's what I'll do. It's so sad to think that my sourdough fun is going to come to an end soon. Maybe that just means I'll have to work in a bread bakery or something soon :).
Now it's time to prep for my wine exam tomorrow! Why didn't I start studying earlier!?
