It really has been awhile... I don't remember what I did today! At least I know what I made :)
- Grilled duck breast with kumquat compote and rustic potatoes: this was quite delicious actually! :D My instructor told me that I rendered the fat down really well on the edges and it got lovely and crispy! I enjoyed having the chance to practice my filleting skills. The compote was rather tedious because I had to take the "pips" or seeds out of them and then slice them into little rounds. The potatoes were also a bit of a pain to cook because I had to constantly stir them in a frying pan, but in the end I thought they were yummy :). I have really been loving my potatoes!
- Foccacia: I didn't get a picture of this, but it turned out really well! I have loved making breads so much!! I wish I could eat them successfully, but alas all I can do is make and look at them.
- Croissants: these things are a two day process, so I started making them today. It reminds me of the way you make puff pastry, just with a yeasted dough I guess. My dough looked really weird when I went to refrigerate it over night, so hopefully it'll turn out okay!
For the rest of the day, I have no idea what I did. I think we learned how to make creme brûlée in demo, as well as some other sweet soufflés! I guess I just studied for my wine exam afterwards. Another day gone!
