- Pea Soup with Mint Cream: this is a delicious and simple soup! I cooked down a little bit of bacon and scallion, then added peas, lettuce, and mint with boiling chicken stock. The trick to this soup is to cook it as quickly as possible so as not to lose the beautiful and fresh green color. As soon as it boiled again, I liquidized it and served it with whipped cream (not sweetened, mind you!) with mint leaves. I had trouble with the seasoning because I don't like adding a ton of salt. Tracie had me add so much more! When I served it I thought I was pushing the salt as it was, but apparently not!
- Deviled Eggs: these were so tasty! I hardboiled eggs and then pushed the yolks through a sieve and mixed them with homemade mayo, chives, and Ballymaloe relish (similar to ketchup). They were soooooo delicious!!! :D:D:D I miss having deviled eggs!
- Brioche: my brioche buns turned out really well! I was so happy! They rose nicely and had a lovely color. They reminded me of the flavor of popovers :).
- Apple and Carrot Salad: I didn't get a picture of this one because I didn't really make a presentation plate. All I did was grate apple and carrot and toss it all with honey and vinegar. Tasty! :)
- Hazelnut Praline: I made this to practice the technique and so my partner could use it for his ice cream. I had to roast and peel hazelnuts, then cook them in sugar until they caramelized. My nuts burned a bit while they caramelized so it was a bit bitter, but still edible at least. It's such a delicious topping to put with ice creams!!
Overall today in the kitchen was not my best. Like I said, I just couldn't really focus. GET SLEEP. That is my remedy I think. Why is it so hard for me to go to bed early? I just try to do too much. I'm already starting to get sentimental about leaving :(. We only have a certain amount of days left to cook in the kitchens! It's so sad! I don't want to move on! I know I can't stay here forever, but still. At least I know how sweet my reunion with everyone at home will be! :)

PS Thank you for your comment Hannah! :) You're so sweet! Hahah I think you over-exagerate a little. It would be fun though when I get home to practice presentation for things and experiment (who knows, maybe it'll come in handy for round 2 of cupcake wars or something :D:D)
