What a day! Sadly, I didn't have anything to take pictures of really, and will not have any eye candy this time :( Basically all we did today was listen to Blathnaid Bergin again. She is the restaurant doctor in Ireland it!! She is so knowledgeable about running a well functioning business in the food industry. It's all about the systems you have in place! I really enjoyed learning about food costing - I have a hunch that I will need to use it in the coming future in some form. Catering seems like a nice way to ease yourself into the food industry. It makes me interested in trying it out! So yeah, I guess this is going to be a relatively short post! I'm not going to talk a whole lot about what I learned in her class today because I've been surrounding myself with it for about 7 hours today!
I went on another run this evening to clear my head after the day's lecture! Since having the time change, the night comes a lot quicker so I have to go run straightaway! The sun is setting at 5:15 right now I think :(. Maybe I need to switch to morning runs or else get used to running in the dark.
I also began making my spelt sourdough! This loaf will be from a starter that I've made myself!! I used the school starter for the first loaf I made yesterday, which tasted lovely! I have really enjoyed getting to know Tim while we work with sourdough. There's a young couple from the States who are doing a work-away at Tim's daughter's house right now and have been there with us for several days now. We've all been having a jolly good time!
One thing I learned today: when you're hiring in a restaurant or café, hire for passion and train for skill :).
Favorite part of the day: sitting with Rachel, Stan, and Tim at lunch today. I always find my conversations with Tim thought-provoking. He is a man of the earth! Also apparently Tim and Darina celebrated their 45th wedding anniversary yesterday!!! Congrats to them!
Time to go to bed! It's so blustery and rainy here right now! Winter's coming! :O
