We didn't have school today! Woohooo!!!!! :) I slept in and then watched a relatively new documentary called "Cowspiracy." I found it very thought-provoking, and a little disturbing I guess because of the consequences we'll face for our destructive actions as a race. That sounds pretty heavy haha, but I guess with major agribusinesses at large and extravagant eating habits, something definitely needs to change. I recommend watching it!! I never realized agriculture (more specifically, cattle raising) has such a major environmental impact. Apparently after calculating all of the water needed in the process of growing the feed for cows, feeding the cows, then processing the meat, one burger requires around 660 gallons of water. Wow. That's crazy! And what's even crazier is that no one is even talking about this.
Back to my day, I really didn't do a whole lot. By the end of the day I was getting so restless!! I am not meant to live a sedentary life, that's for sure! I can't wait to get back to running and cooking and LIVING!!!
At least I was able to shell some hazelnuts they're growing here and roast them :). They were so yummy! It's amazing how much work goes into the process to yield just a handful of them. I have a much deeper appreciation for nuts now and how complex and time consuming it is to grow (first of all it takes a couple years for the tree to bear fruit in the first place!), harvest, husk, shell, then dry the nuts.

Another adventure I had was in continuing the process of making my aged sourdough. This thing is taking forever!! I can't wait to bake it tomorrow - FINALLY! The dough has been sitting and fermenting for longer than normal at this point and is looking pretty active. Yum!
Other than those two things, I haven't had much to do today. Maybe that's for the best though. My body needs a reset I think. I'm wearing myself too thin! Plus with the weather getting cooler and windier, I feel like it's going to be even easier to get sick again! Not me though!
Happy Monday everyone!!
