- Chicken Salad with Tarragon Dressing: this is where the roasted chicken went. YUM! I made my own mayonnaise for the sauce, which also had a bit of crème fraiche. Mayonnaise is so straightforward- egg yolk, oil, vinegar, and salt. It just requires quite a lot of whisking. I really liked this dish!! The tarragon had a nice, uplifting flavor too.
- Gravy: I never realized gravy was so simple - pour stock over the pan, place on a burner, and whisk to get off all of the drippings. Then you strain it and skim off the fat, add Roux to thicken and voila! A delicious (and in my case, lemony) gravy!! :D
- Redcurrant Sauce: this was pretty simple as well. I took frozen redcurrants and boiled them down with sugar until they bursted. The sauce had a flavor similar to cranberry sauce, and it went perfectly with some of the pheasant dishes that other students made.
- White Yeast Bread: my bread went really well!!!!!! :D My teacher said it was cooked really nicely too. Making yeasted bread is such a process. Wow. I started getting ingredients together around 8:30 for it, then began the process at 9:00 or so. The loaves/rolls came out of the oven around 12:00. At least I was able to do everything else in between, so it wasn't that bad. I enjoyed kneading for awhile, and also shaping the dough! :D
